This is my favourite fall breakfast. I have been hooked on this savoury steel cut oats breakfast for awhile now and wanted to share the recipe.
This is a meal that will fill you up for a long time, especially when you include an egg. Full of protein, fibre and b vitamins. As well as a dose of probiotics from the sauerkraut. This recipe could be 2 large portions or 3 small portions.
You could make this an immune boosting meal leading into winter by cooking the oats with a piece of Astragalus root, or Reishi Mushroom strip. Then once the oats are boiled simple remove these woody bits of herb.
-1 cup steel cut oats
- 2 cups water
- 2 or 3 poached or boiled eggs (depending on how many people are eating)
- Some sort of greens (here I have pea shoots, you can use any leafy green or sprouts you have available)
- Chopped scallions or green onions
-Nutritional yeast flakes
-Braggs sauce or soy sauce
-Sprouted flax powder (or any other fibre source you have on hand)
Cook the oats on the stove, bring to a boil then simmer on low heat until water has dissolved.
Meanwhile boil water in a shallow pan and poach the eggs. Add the oats to a bowl, and garnish with your greens, scallions, and at least a tbsp of yeast flakes (I like a few tbsp's). Add on as much sauerkraut as you like (I like a lot!) sprinkle with flax powder, and sprinkle on as much Braggs as you prefer, this will add the salty flavour to the meal. Lastly top with your perfectly soft poached egg, and enjoy hot!
